On our way to a friends house the other day, my husband and I saw a hillside full of fly agaric. He went up the hill and to our surprise, found among the poisonous and hallucinogenic there were actually six pounds of porcini mushrooms.
We are curious about any techniques to preserve them that you have found particularly good - we're contemplating drying them on wire hangers, or using two air filters strapped to a fan. . .but are there any other good techniques e.g. putting them in oil, freezing them etc. That we should know about?
And then also since we will have more porcini than we can just sauté or make risotto with, any particularly good recipes that you would like to share?
