Our garlic crop turned out very well this year due to a wet winter and spring (very unusual). Our normal annual precipitation is 9-11" and we got 5" in May alone.
So I have a fine crop of garlic but given our very arid climate with average humidity in the 10% range and very high summer temps, I can't plait and hang it in the kitchen because it will dry out and turn into rocks.
I was reading about garlic preserved in EVOO last week and the chances of botchilism and don't want to go that route either so I'm thinking of freezing it. It will last us well into the fall.
