Hi all, lets share ideas for what prep work can be done on Sunday to make weeknights dinners a breeze? For example, last Sunday i have sliced onions, chopped carrots, chopped celery and shredded large ziplock bag of cabbage (i know you can buy pre-chopped but i prefer to chop it myself). I also made food which lasted till Tuesday.
Tuesday night i used sliced onions, carrots and celery to make beef stew in my Instant Pot. Just threw it all in and had dinner in 30 min. I also used some of pre-shredded cabbage for the salad
On Thursday, I used all of the remaining sliced up onions and cabbage to make quick stir-fry type dish. Used precooked sausage for a protein.
Tonight is fish night, will grab some on my way home.
I am now thinking of prep ideas for next week and all i came up with is pre-slicing veggies for celery-leak soup. Any of you do this sort of thing? What are some ideas you can share?
