I have three pounds of lamb neck- help, fast!

And I want to make stew, preferably in the crockpot, because it will generate less heat. I want to use fresh rosemary, thyme, and beans.

The meat is still on the bones. I figure I should brown it, and then cook it with some water and the herbs and beans on low for a long time. I've never cooked lamb neck before and I'm a little nervous. Any helpful pointers? Thanks.
