Potluck Food for Work--Easy, but Delicious Suggestions

I am a schoolteacher in a department of about 22 people. During the year, we each sign up to bring breakfast AND lunch for our department (Fridays only).

I'd like to hear your suggestions on delicious (and hopefully easy) foods to bring when my turn comes around (we sign up twice a year, once each semester). Oh, vegetarian options are welcome, but not necessary (about 5 people in the department are vegetarian).

I typically make/bring the same goodies, but thought I'd see what else is out there. What I typically make/bring (to better help you help me):
Spinach lasagna or Veggie Quiche
Bagels & Cream cheese
Chocolate chip cookies
Fruit salad
Some dessert--lemon bars or apple pie or brownies

I feel like the above goodies are pretty generic (they taste good, but they're nothing special). They are all gobbled up, but I'm looking for new options. And I prefer cooking/baking rather than buying store-bought, if possible.

More guidelines:
These should all be things that are easily transportable, and don't need to be warmed up or tweaked once they are in our office--we are strapped for time (bound by the bell!) and resources (a refrigerator and a mini-microwave oven). Finally, I am also a part-time grad student, so the goodies can't be too time-consuming to make as I am in class twice a week from 6-9:15pm (and I need to be at school around 6:30am).
