Help Potato Party Food

We spend Christmas Eve with my SO's brother and his wife. We usually do finger foods and desserts. This year, she bought a spiral ham instead of her normal cold cuts. She said she'd have stuff for sandwiches.

Here's what she's going to prepare:
Spiral ham and sandwich fixings
Cheese and Crackers
Beef roll ups (dried beef, cream cheese, onions, pickes)
Taco dip with tortillas
Cheesecake or some other kind of cake

I'm taking:
Deviled eggs
Banana Pudding

The deal is she suggested scalloped potatoes. To me, those do not belong on this menu. Then I suggested making twice baked potatoes instead. She seems to think that's too much work but left it up to me. I love making those for bbqs and things but they just don't seem festive enough for Christmas to me.

What do you all think? Any suggestions? I don't mind making potatoes but want it to look nice and fit in well with the other foods.
