I have always made potato latkes from scratch, including grating the potatoes by hand. However, this year I need to make a much larger batch, and have decided to use the food processor to grate them.
My food processor has both fine and coarse grating options. Which one should I use? When I hand-grated I preferred shorter shreds, rather than long ones.

I will use the coarse -grate blade and then put the potatoes through the ricer (fantastic idea!!)
I will also cut the potatoes into the size shred i want (another fantastic idea!!)
