I am have been charged with contributing a dish for a morning after a bachelorette party breakfast at my friend's home. We'll all be waking up hungover at one friends home. A sausage quiche thing is already on the menu as are fruit, muffins, bagels, etc. This is one morning we won't be worrying about carbs. I'd like to make a comfort-foodish potato casserole type of dish - without eggs in it - that I can make and refrigerate the day before and re-heat in the morning. Any ideas or direction would be great. Thanks!
