Pork tenderloin ideas/techniques for the equipment challenged?

Hi all,

We're recent arrivals to LA and in our current dwelling there's an electric range and no outdoor grill. No slow cooker or smoker. That said we've really been enjoying cooking out here, so many cuisines, flavors, fresh produce, etc.

I'm pretty inexperienced at cooking with pork. Though I make a nice oven-roasted tenderloin we've gotten bored with those. We recently ended up with some 4 lbs of tenderloin (2lb x2) and I'd love to try something new. I know it's a very lean cut, is there anything I can do to tenderize it, prep it, shred it, whatever so that I can try something new? I just have this premonition that everything I try besides a simple oven roast is going to turn out dry and leathery.
