Pork Shoulder cooking questions

WiscoPig | Jun 22, 2015 02:21 PM

Hi there, I am making pork shoulder on the smoker for a family get together on Saturday. My concern is that I get the shoulder up to temp(195) in time. Guests will start arriving around noon and I really dont want to get up at 4am to start smoking as I will have enough crap to set up that morning.
I am planning on doing two 7-9 lb de-boned shoulders from Costco. If I cut them in half, roll & twine the now 4 pieces, will they cook faster than if they are two huge chunks or am I still looking at 14-18hrs? My other option is to smoke them overnight in the electric smoker. Anyone have any advice for me?
