I got a great deal on a pork leg yesterday - 22lbs for $22. Thing is massive. I have all day today to make something of it and am having people over for brunch next Saturday morning. I'd like to do something that I could use for that meal (whether I freeze it or whatever). Was thinking about roasting it with onions and sage and freezing it to reheat with some Juniper duck and pork fat I have kicking around in the freezer. Serve with mustard and chutney. Thoughts? Other ideas? How long should I budget to roast this beast? Like I said, it's 22lbs with the bone in.
