pork confit

I am making pork confit again.My question is that in the recipe i'm using,(bittman grilled pork confit) it says once the pork is cooked,if you keep it submerged in the fat in the fridge,it will be good up to five days. Does this seem like a short shelf life for confit? I thought the confit method of cooking preserved the meats for much longer. Do you think the pork will be OK after say a week, or maybe longer? Thanks
