Indoor cooking. I sear 'em for 2 mins then bake at 400º till they hit 140º.
They come out juicy, but the spices I'm using, though they poke thru, are boring.
Marinate for a couple hours in yogurt and kefir with ginger, roasted garlic, and some chili powder, salt pepper, grains of paradise.
