Pork Butt Question

I am cutting up a 6lb. pork butt for Porketta (Black Pepper, Fennel, Garlic), I will cut into about 1'' cubes and season, then put all into an aluminum pan on the grill, medium heat, covered, was wondering if someone might have an idea how long this will take to finish off ?
Should I get the outside of the cubes crispy (seared first) or after they come to temp, I usually broil them in the oven a little, then slow cook them, but I want to do this on the grill.
