New to Pork- need help

Tomorrow I am hosting a dinner party for four. I want to serve pork over a bed of garlic spinach and maybe a cheese risotto. What kind of pork should I buy (the shoulder and then slice it???) and how should I cook it so I can keep it nice and juicy. I would like to use some fresh herbs and I also want to steer away from something too fatty- I am positive it would freak out these particular guests. Also, I do not have access to a grill. Thanks in advance! (I usually dine out : )
