Just learned that I have to change my Easter menu to pork. Am in desperate need of a simple, flavorful receipe using a cut of meat that will not be too dry when cooked. Bittman has one that calls for sage and potatoes, using a boneless pork roast. Anyone ever tried that? Any ideas (as easy and foolproof as possible) are welcome. TIA
