I didn’t realize it until I was an adult, but so much of the food we ate was “poor food”—my parents were raised during the depression. All bread could be toasted: topped with cheese, cinnamon sugar, margarine, marshmallows . . . We had saltine crackers and warm milk with butter floating on top and also graham crackers and milk for cereal. But it’s different today because they took the lard out of everything now and the crackers just turn to mush. Lettuce and Miracle Whip sandwiches. I forgot about all the uses for Miracle Whip: on cold, canned pears. It was our whipped cream. Creamed chipped beef—I still crave this! Pancakes for dinner!
