A couple weeks ago, I had a hard time deciding where to get a taco as I cruised Santa Rosa's taco truck row. Then I spotted the smoke coming from the outdoor grill at Quezada and my decision was easy.
The young woman manning the outdoor serving area pulled a half chicken off the grill, whacked off the hind quarter, and deftly removed the meat from the drumstick in one whole piece. My pollo asado taco was served as show below with just a sprinkle of freshly chopped onion and cilantro, a lime wedge, and a squeeze bottle of the smoky and very hot red chili sauce. I was glad the chicken wasn't chopped up as the fresh grilled scents and texture of the delicious skin stayed intact. Absolutely wonderful.
