Polenta lasagna question

free sample addict aka Tracy L | Dec 13, 2009 11:17 PM

I am contemplating making a polenta lasagna for NYE. I have made on occasion a casserole where the bottom layer is polenta and the top is boneless chicken cacciatore. I have always ladled the soft polenta and covered it with the chicken. When researching polenta lasagna recipes I have discovered that they all require the polenta to harden (set). My idea is to add another layer of polenta to the top of the chicken and let it set up a little bit and then cover with cheese. Is there a disadvantage to going with the softer polenta? Thanks
