My father was from a Hungarian family and he taught my mother to make a Hungarian biscuit called POGÁCSA [POGATCHA]. It was really good.
I have searched the web for recipes, and found several, but they are quite a bit different than what my mother made. For example, my mother would roll out the dough and cut circles from it using a water glass -- the recipes on the web involve molding the biscuit into a thicker shape using the hands.
This makes me wonder whether Hungarian Jews had a different type of recipe and biscuit than non-Jewish Hungarians.
Does anyone know of recipes for POGÁCSA [POGATCHA] that might match my mother's approach?
