FOUND - Best Pizza in Town

I am always an enthusiastic reader of the pizza strands on this site. Having grown up in Chicago, I cannot eat Zachary's or any other "deep-dish" or "Chicago-style" Pizza on the West Coast. But I do love the pizza that this region DOES do well - thin, chewy, crisp crusts and seasonal toppings. Yes, A16 is authentic, but a little TOO authentic - less burn and more topping would be nice. And while Delfina is my favorite restaurant in San Francisco proper, their pizza is merely good. Unitl recently, I counted Dopo as my favorite pizza in the area. Then, tonight, I tasted Nirvana.

Eating a late dinner with my buddy Goldberg at Chez Panisse Cafe, we ordered the wild nettle and pecorino pizza, knowing it would be yummy but totally unprepared for the perfection to come. A perfectly cooked crust, at once both flaky and lightly charred was topped with a perfect ratio of nettles and cheese. Just the right ring of untopped crust along the edge. And just enough oil, without a single drop falling unto my fingers. They hit the apotheosis of pizza. In fact, the pizza would have stolen the entire show were it not for the bollito misto...and the persimmon and fennel salad...
