Pit Beef

I haven't had pit beef from the stands in the "far east" (Pulaski highway) for a good ten years or so, but I see from the May 2003 thread that they are still alive and well. On the west side of town I enjoy the pit beef served at The Canopy. I like it on a kaiser roll with onions, BBQ sauce and horseradish, with fries doused with vinegar. Anyone else have any opinions concerning Baltimore's own little idiosyncratic contribution to "barbeque"?
