Help with picky out-of-town visitors

My relatives are coming to town this weekend, and I need to pick a restaurant for dinner Saturday night. They refuse to leave Manhattan and will already have eaten seafood and Italian. Further, my cousin writes,

"We are looking for some place with a really good atmosphere for a long meal ... looking for moderate to upscale NY fare for a long meal Saturday where we can catch up and maybe meet some of your friends ... Ambience is probably our top variable (not necessarily fancy, but something cool). so we can just eat and hang out for 2-3 hours. We are eating more meat and less carbs these days (or at least trying to) but like you are not wed to the idea of a steak house. Does this sound as high maintenance as it feels typing this?"

The answer to his question is YES, but does anyone have any suggestions, preferably between $30-40 per person?
