I've been in NYC for five years, but I haven't had a good pad see-uw since I left Chicago.
All of the pad siew here tastes like Chinese food with soy sauce and sugar. Also, the noodles here are waaay too skinny. I want thick, charred rice noodles. Even the famed Sripraphai doesn't live up.
Can anyone help? I was thinking maybe this is a regional/ethnic thing. Maybe Thais in NYC are from a different area of Thailand than the ones in Chicago?
