I was about to buy a jar of pickled tamarind leaf form my local Thai Market (Rabeing, Bailey’s Crossroads) when I got a quizzical look from the cashier. “That is very hard to cook with. You should buy our prepared tamarind leaf,” as she pointed to a tub in the freezer case. “They are yummy,” she said in a thoroughly convincing manner.
So I got home and defrosted the tub. They were not just yummy, but very, very yummy. They had a kind of creamy sauce and bits of pork. And they were very spicy. I mixed them with some vegetable to tone down the spiciness.
The next morning, I tried it from the tub straight out of the fridge (minus the vegetables), and wow (!) were they delicious. Bingo. This is the best way to have them. Highly recommended.
Not sure if this is something fairly common in Thai markets.
