I made pickled asparagus for the first time today. My recipe (and many others I checked) does not say when they will be ready to eat. I found recipes that said everything from 5 days to 4 weeks, my friends who helped me said 6-8 weeks. We did not blanch the asparagus and they are whole. We processed them for 10 minutes (not in a pressurized cooker). I hope I don't have to wait 8 weeks for my Caeser garnish LOL!
