Sorry; I’m Covid-19-bored.
Wife is up early organizing the kitchen and pantry. And that means for me it’s a morning of running interference and pulling stuff out of her “donation pile”. (Thanks Kondo!). There is one thing with zero debate. The undisputed heavyweight champion multi-tasker of my kitchen. The one thing that gets used everyday. My single favorite piece of kitchen gear. Not a knife. Not some clad pan with a name I can’t pronounce. Nothing I need to plug into an electric outlet.
Here it is - a very humble aluminum half-sheet pan.
It does it all. It’s a lid for a mystery giant stockpot with no lid (which coincidentally was in the donation pile) , it is my tray to carry mise en place to my backyard wok station, it’s the drip pan when I slice juicy meats, roasting veggies? Yup. You name it, it’s done it. I keep one in my oven. It’s my diaper for slow braise foods and keeps the floor of my oven drip free. I bought them from a restaurant supply house decades ago, and they have zero warp. One was recently used as my “interesting background” for photographing a shucked oyster! At first I moved heaven/earth to keep them clean. Now I love the Patina.
