Hi all. I'm in search of a good saltado recipe to emulate these awesome dishes I've had at restaurants at El Pollo Inka, and Inka Anaheim in the L.A. area. The dish should be simple to make, since it is a stir fry consisting of seafood, chicken or beef, with tomatoes, green onion, cilantro and crisp french fries. However, I don't know what spices to use. The spices make the dish. Has anyone come close to making a saltado which tastes authentic?
