Perugia, Italy - London (Portuguese pastry, bread...)

Does anyone have recommendations, especially local specialities, markets and shops, for Perugia, Italy and/or towns nearby? I am off there for a few months early next year.

In the spirit of reciprocity, can I recommend the following in London, even though they have been mentioned before:

Paul - (especially the fougasse and baguettes)
Poilane - the sourdough and shortbread biscuits
St John's - best bread I have found in London. Sourdough is nearly as good as Poilane and the brown and rye are better. Proper eccles cakes and, hopefully, proper mincepies for Christmas.
de Gustibus - good sourdough

Artisan du Chocolat (salted caramels and flavoured ganaches) followed by Roccoco and Chocolate Society for plain bars, especially the 99% cocoa at Roccoco.

Excellent Portuguese pastries in NW/W London, especially the small custard tarts.

The almond croissant at the bread stall at Borough Market (I think it is flour power.

Gordon Ramsay's new one, Secrets is v good. I got it for £12.98 at Tesco (hardcover).
John Burton-Race's French Leave is a good read.
