Perishable Dates / Date Bars

So I just purchased 1 lb of Medjool dates from Trader Joe's in the fridge section. They have an expiration date of Feb 28. But I just made a "home edition" of Larabar date bars.

Question: How perishable are these dates and the resulting bars? Should I "air dry" them or cook the bars so they will last at room temperature for a month?
I presume the bars are perishable due to the moisture content.

Here are the two batches I've made:

Batch 1:
4 oz dates
3/4 tsp cocoa powder
1/4 tsp (total) of mix chipotle & ancho chili powder
1 oz walnuts.

Batch 2:
4 oz dates
1 oz nuts (slivered almonds and some pecan pieces)
1/3 tsp vanilla paste
some shaken cinnamon.

I just mini-chopped them until a good texture and rolled out into bars inside wax paper.

anyway, they are sitting in the fridge for now, so any suggestions on the perishable side will be appreciated.
