Perfect Recipe

I'm going to try Alex Guarnacelli's recipe for Parker House Rolls and I was thinking I'd just like to find the perfect recipe and stop the continual hunting. I have a folder with at least 20 recipes for pie crust.

Have you some "Perfect" recipes to share? I love, really love, Marcella Hazan's recipe for Roasted Chicken with 2 Lemons. So simple, so perfect, even great cold the next day. I don't truss the chicken, just use twine to tie the ankles together. When I turn it over after the first 1/2 hour, I just use wadded up paper towels in each hand, chicken is not very hot yet. I get those big lemons from Costco so just use one and I don't prick it, just quarter it and stick it in the cavity. I much prefer white meat and this recipe makes the white meat so moist. I do buy the best quality chicken and always make from fresh, not frozen bird.

I also love Marcella's Bolognese recipe. Willie's Crisp is great; I make it with Nectarines or Peaches and Blackberries in the summertime.
