I promised a chef in the Caribbean that I would bring some pecorino/romano cheese with me so that he could make cacio e pepe the right way.
What size wedge should I buy for 4 people, or is there another way?
Is Whole Foods or Wegman's okay or do I need to get to di Bruno's?
