Was in the neighborhood, having lunch at Sripraphai (excellent, as usual) and dropped into Pearson's as I hadn't tried them out since they moved into Legend's quite a while back. Very strong, mixed feelings here: the meats were cooked superbly (brisket, pork shoulder and pulled pork) but had almost zero flavor. This is how I remember it from the old place, where Philly's is now. After reading the article in the Times last week I understand that Pearson wants to play the purist card and flavor his meats with only smoke but, come on. Some salt that we added at home immensely improved the flavor. The sauces were equally bland. Really boring, all three of them. Curious to see how things turn out at the new place in Manhattan but, for now, Pearson's sure makes me miss central Texas.
