In today's SF Examiner magazine (link below ) she says, "Manhattan, irrepressibly urban, a world cultural center, and emotionally more connected to Europe than the California coast, develops its culinary ideas first and worries about the ingredients second. . . the New York culinary establishment believes that a talented chef can make a silk purse out of a sow's ear, while in Northern California our most influential culinary heroes only care to make a silk purse out of the purest silk."
