I have had problems with an automatic noodle maker much like the Phillips one. It makes nicely shaped pasta and all but when it hits boiling water, it just falls apart either into small pieces or turns to mush.
I've used many recipes ranging from seriouseats to the one suggested by Phillips. Basically that's 1 cup of all purpose flour with some salt and an egg plus enough water to make it to 75ml. I bring water in a pan with salt to a boil, lower the flame, and put them in. I've had them in for 20s, 30s, and it still falls apart, sometimes as soon as it hits the water.
Should the water be in a rolling boil or simmer? Maybe smaller batches instead of all at once (I usually make 2 cups worth)?
I know that some recipes call for resting the dough but I can't for this machine. I figure I can rest it when it's already pasta shaped, but it still falls apart regardless. I have not done anything different from a friend who has a similar machine but hers turns out well. I'm perplexed on why.
I'm determined to get it right. Does anyone have any experience with these machines?
