Well, the school week is over and we made through in one piece. We sent a lot of fresh fruit (cantaloupe and grapes), a block of KP Cabot cheddar and Rakusen's mini matzahs, a can of (ugh) macaroons, and a batch each of banana walnut mini muffins and coconut blueberry mini muffins.
The muffins were homemade and really weren't half bad. The banana muffins were made with cake meal and were a little bit too sweet but that's easily correctible. The blueberry muffins were made with coconut flour which isn't certified KP but is certified gluten-free, which we are willing to accept at home. They tasted very good if you like coconut. This recipe is gluten-free and can be either dairy or pareve with no loss of quality. Coconut flour is a new discovery for me and I'm looking forward to trying out more recipes with it after Pesach.
Thanks to everyone for their suggestions and input. Now If I could just get my daughter to stop complaining about the lunches I've been sending this week everything would be great.
