I promised this recipe a couple of days ago. These are more like popovers than muffins, and have become a family favorite.
1/4 tsp. salt
1/2 cup oil (I like peanut oil for this)
1 TBSP sugar
1 cup water
Combine above in a pan and bring to boil. Then add:
1/2 cup matzo meal, sifted
1/2 cup matzo cake meal
Allow to cool a bit.
Beat in 4 eggs, one at a time.
Grease cupcake tins (TJ's canola oil spray works well).
Fill cups 1/2 to 3/4 full.
Bake at 425 degrees for a half hour, then at 350 degrees for 15 or 20 minutes.
Makes a dozen.
