Parve rosewater pudding. Recipe?

I had a wonderful rosewater pudding as the dessert course at Rafael's in Paris. More or less a sherbet you eat with a spoon. Heavenly. And because it followed a meal that featured foie gras and lamb, it had to be parve.

Anyone know how to make it? Or, at least, what it was made of?
