I am looking for a really good, basic pastry cream recipe. Now, here's the thing. I have noticed that there are many different consistencies of pastry cream. For instance, ever noticed how some eclairs come with a whipped cream sort of filling while others have that custardy stuff in them? What I am looking for is the whipped cream type. I guess my current ideal is a whipped cream with some texture and a bit of weight. You know, not fluffy and filled with air but with a bit of oomph to it. Gee, aren't I describing it perfectly?
