Parmasan Crusted Chicken? Help needed

Trying to replicate one of my favourite dishes at Cheesecake Factory- Chicken Romano.

This weekend, I coarsely grated paragano-reggino into my breadcrumbs. Dipped chicken into egg mix before coating with breadcrumbs/cheese. Cheese did not stick??

Someone suggested using egg whites only for dipping.

Any thoughts? Help is much appreciated.
