I know traditional French bread is a point of pride among Parisian bakers, and I am greatly looking forward to sampling some of the best. However, I also really love whole wheat and whole grain breads. Truth be told, I rarely eat white bread anymore due to the health benefits of whole grains. But health won't be an issue while I'm on vacation...bring on the refined flour and sugar and butter and fat and calories!!!
Nonetheless, I'm wondering if these top bakers also bake whole wheat and whole grain breads...and do restaurants offer them as well. Haven't seen anything about this in the guidebooks and boards.
