Paris - Week between Christmas and New Years

It looks as though we will have the week off between Christmas and New Years and we were debating a trip to Paris and perhaps another location within France such as Provence or Paris and some day trips (Reims & Strasbourg).

We have been to Paris a few times so we would most likely rent an Apartment and just further explore the city. I have been researching some new and places to eat since we were there last (2015) and many of the suggestions Elmer, Septime appear to be closed that week. Is it common for many restaurants and bars to be closed that week?
