Paris, single diner...

I got a last minute deal on a trip to Paris for Oct 23-29. I will be travelling with a friend, but plan to spend most of my time alone.

As a single diner looking to eat/drink one's way through the city, where would be some good places to 1) sample definitive classics (beef bourguignon/coq au vin/foie gras preparations), 2) eat alone/at the bar, 3) sample amazing wine 4) do all of this moderately cheaply.

It's just me, my wife's staying home, no chiquitas to impress, no need for romance. Just straightforward, simple good food/wine value.

I've pulled many suggestions from the board, but many lean more towards "haute cusine" -- am thinking of trying Guy Savoy one night just to get some of that experience -- but otherwise I'm more inclined to the Chowhound Ethic.

Any input welcome!
