Paris restaurant advice

I have been lurking about this site getting some good suggestions for restaurants for our upcoming trip to Paris in two weeks. My husband and I have been to Paris several times and are fairly adventurous when it comes to food. Our travel companion, however, will only eat fish and seafood, chicken, pork and beef...ie no duck, lamb, veal, etc. Most of the restaurants I am excited about offer only set menus for dinner, but I am reluctant to book more than one or two of them. I am trying to mix in some restaurants that will offer choices for our friend.

We are staying in the Marais, near Metro Chemin Vert, and I think for our first night (Wednesday), after a transatlantic flight, we would like stay pretty close to our apartment. Looking at Le Petit Marche, L'Ange 20, Chez Janou, Colimacon, but having a hard time deciding, and any input would be greatly appreciated.

These are some of the restaurants we are considering for the rest of the week...need 5 restaurants.

Zebulon
Pierre Sang Oberkampf (fixed menu)
Virtus (fixed menu)
Cezembre (fixed menu) Is their lunch menu also fixed or can you order a la carte?
Le Mazenay
Garcon!
Bon Saint Pourcain
Chez Monsieur
O'bergine
L'Apibo

Trying to get a variety of restaurant types and also not trying to break the bank every night...one or two splurges are fine. Would appreciate any feedback, and any suggestions for additions or deletions. Thanks in advance for your help!
