Only in Paris... neighborhood restaurants you would head back to first

DH and I will be visiting Paris (staying on the Left Bank near the Luxembourg Garden) in early December.

We like to find restaurants using the Calvin Trillin method (i.e. asking a local "if you were beamed to Antartica for 6 months, then found yourself back home, where is the first place you would eat - and not the fancy place you would take your parents for their anniversary?")

So, what say you, good folks of Paris? Where is the first, non-fancy, place you would head to for a really great meal prepared by the chef on site.
