Paris Itinerary - Please review

Heading to Paris for four full days in a few weeks to celebrate a milestone birthday. Travelling with friends and family who have all been to Paris at least once. Looking for recs/feedback on the places we have picked. I know it is a lot of food. If we are full, we are flexible and will pass on places if necessary since we are a pretty flexible group but would rather have a recommended place to stop between sightseeing than not. If you find any of these places a MUST, please also let me know. Lastly, we are staying in the 4th and would appreciate recs for any boulangeries to grab our morning baguette and coffee. Thanks in advance! Advice is greatly appreciated!!!

Thursday
Breakfast - Les Philosophes
Snack - Marche Bastille
Lunch - Briezh Cafe
Snack - Berthillon
Happy Hour - Mary Celeste
Dinner - Au Passage

Friday
Breakfast - Stohrer?
Lunch - 20 Eiffel (does anyone have an opinion about this place? My other option would be Chez L'Ami Jean.)
Happy Hour - Le Petit Vendome or Le Fumoir? (based on a rec from a local friend - anyone recommend or have comments on either?)
Dinner - Le Servan
Late Night - Le Perchoir

Saturday
Breakfast - Holybelly or Du Pain at Des Idees (Is either worth the trek to the 11th?)
Lunch - Restaurant Joséphine Chez Dumonet or Creperie de Josselin or Chez Alain Miam Miam sandwiches at Marche des Enfant Rouge??? (May skip lunch depending on if we have a big breakfast at HolyBelly)
Snack - Pierre Herme
Happy Hour - L'Avant Comptoir
Dinner - Le Comptoir de la Gastronomie
Late Night - Experimental Cocktail Club or Au Petit Fer a Cheval??

Sunday
Breakfast - Le Grenier a Pain

Lunch - Any place to eat and people watch on or near Rue des Martyrs?
