I’ve never been to Rome, but in my experience I’m a fan of the classic Roman pasta dishes for worknight dinners. Cacio e Pepe, carbonara, etc. don’t have a reputable supplier for Guanciale, so ala gricia is off the table.

Either way, is there other pasta dishes in this “family” i might be missing? It’s not just the simplicity of the preparation, but the simple flavors of these dishes are very appealing to me as well. Again, I don’t have reliable access to Guanciale and I only really mess with dried pasta (which im told is more authentic for Roman dishes).
As always, wine recommendations are appreciated.
