My first organic (non-grocery store) turkey!

Hey all,
for the first time ever i have ordered a turkey from a local farm - organic, never frozen. Anything I should know before I pop it in the oven? I've read there are differences in cooking grass fed beef vs. "regular" (it's funny to me to call it regular - I grew up on grass fed, my grandfather had a small dairy farm!)

Anyway, i'd hate to ruin what promises to be a lovely bird, so any advice ya got, I'd love to hear it!
