Is it necessary to order wine in Paris?

I know that the subject header may sound silly, but I couldn't think of a better way to put it. Here is my dilemma:
We do not drink alcohol and I am worried about eating in Paris restaurants (especially the fancier types), and not ordering wine. Is this frowned upon? If we hit a great restaurant, will we be welcome if we don't order wine?
The Italians had no problem, sometimes just shrugging their shoulders when we said "No vino, grazie." But we wonder how the French will accept this?
I am almost affraid to visit Taillevent or similarly classed restaurants because of this.
Any feedback would be appreciated.
