Why do I need to use so much more oil than the amount stated in a recipe?
This is a problem that's happened to me many times. For example, a pad thai recipe calls for 4 tablespoons of oil. Half way through cooking, I realize that if I don't add more oil, the noodles are going to burn up and the kitchen is starting to get smokey. Does it make sense that 1/2 pound of noodles with the other ingredients can survive on 4 tablespoons of oil?
My equipment is an electric stove and a wok.
